As a full time working Mom with 4 other ambitions going strong, my weekends are planned a month in advance. I am currently juggling momager duties for my aspiring actress daughter, coordinating photo shoots, actually writing down recipes for future blog posts, reviewing music for my other blog, mixing music for licensing companies, and keeping everyone in line at home....I may get an hour total to sit down and reflect on my day then it's off I go....I recently came across this recipe for an "Apple Cinnamon Roll Bake" on that dreadfully sinful "Buzzfeed Tasty" site. I needed a quick get up and go meal to go with my coffee on a busy Saturday morning. I decided to try it and get moving....

Here's what my version looked like: Not Bad
I followed the recipe exactly, it was more cakey than I expected, meaning not saturated with the sugar and butter but it was really good. Another note: I drizzled the dough icing on top after baking rather than mix it in before. The recipe also calls for ice-cream on top as seen in Buzz Feed's picture. Since I made this as a breakfast bake, I left the ice cream out. But as a side note: A little melted ice-cream would've added some more moisture to the cakiness on the bottom :)

2 packs cinnamon roll dough with icing
4 eggs
½ cup milk
1 tablespoon cinnamon
1 teaspoon vanilla extract
2 tablespoons butter
2 granny smith apples, diced
1 cup brown sugar, packed

PREPARATION
Preheat oven to 375°C.
Cut the cinnamon roll dough into 3 even strips, then cut those strip in 3 pieces, making 9 pieces total per cinnamon roll. Set aside the icing.
In a medium bowl, combine eggs, milk, cinnamon, and extract, stirring until smooth. Set aside.
In a pan over medium heat, combine butter, apples, and brown sugar, cooking until sugar starts to caramelize, about 10 minutes. Remove from heat.
Sprinkle the cinnamon roll dough pieces evenly in a 9×9 baking tray. Pour the egg mixture on top, followed by the apples. Drizzle the reserved icing on top.
Bake for 25–30 minutes, until golden brown.
