NOSTALGIA BREAKFAST - CINNAMON TOAST

One of my favorite breakfasts growing up  was cinnamon toast.  It is still a family staple in my house.  Not only is it delicious,  It was mom's way of getting us to eat wheat bread  or as I use to say "brown bread".  Ingredients 4 slices whole grain bread softened butter  (room temp or bread will tear) 1 1/4 Tbsp. cinnamon (for all 4 slices) 1 1/2 Tbsp. granulated sugar (for all 4 slices) Directions        Preheat oven/ toaster oven to 450.  Spread butter on top of each slice of bread.  Sprinkle enough cinnamon to cover bread (a light to med dusting is enough) Approx. 1/2 tsp of sugar to top each slice (less or more to your liking)       Your bread will have a very rustic look before toasting. Put bread in preheated toaster oven or broiler (DON'T LEAVE THE KITCHEN!) The top will melt quickly from the high heat.  Cooking time is approximate (1-2 min) When butter and sugar melt  turn toast over and ...

TEMPTING TURKEY BURGERS

It's Spring Again!  The warm weather has finally surfaced in New York. For my family...it's burger time .         Now for myself, since I am holding off on meat for a little while longer  I am going to suffer through a salad. My babies will be able to indulge :(   My turkey burger recipe is both simple and very flavorful. My recipe is for 8 medium sized burgers -about 1/3 lb each. Each 1 lb. package of turkey makes 4 burgers.   Ingredients 2 Lbs. Ground White Turkey 1 small white onion diced olive oil salt & pepper 1 Tbsp. granulated onion powder 1 Tbsp. granulated garlic powder 1 Tbsp. ketchup Cheese of choice   Directions The key to a great burger is not over handling the meat. I'm sure you heard this before.   Add ground turkey to a large bowl.     Sauté diced onions in 3 Tbsp. olive oil in a frying pan. Onions will cook to a light brown. Keep an eye on heat. Do not overcook....

37 DAYS PESCATARIAN :)

March 1 2017: I decided that I would try to go without meat for a while. For health reasons primarily, and to make some changes in my food choices. Since the religious Lent holiday started on the 1st, I decided 45 days would be perfect. I decided to omit beef, poultry, and pork from my diet. I don't eat other types of meat like lamb, goat, or game. The only meat I would allow is fish, which I don't really consider it to be "meat", but some beg to differ.  Anywhoo...I've been on this quest to try new things, make healthier choices, find some new fats etc...I will say this. The journey has been interesting so far. See I normally, do carb fasts, but since I gave up meat, I allowed myself to indulge in certain grains AND continue my dairy intake. The reason why I did that is in case I prepared something that I did not like, I would have my side of brown rice or wheat pasta on hand. Hey small steps. I joined a secret  vegan challenge group on Facebook that welcomes veg...
