SO SIMPLE MACARONI SALAD

I usually make a batch of macaroni salad once a week to go with...pretty much anything :) Chicken, sandwiches, burgers, you name it.   I use pretty much the same ingredients that I use  to make my "classic potato salad"   with one more addition; albacore tuna. It's simple and can be done in minimal time. Ingredients  16 oz. box elbows macaroni 1/2 cup chopped onion 2 large boiled eggs 1 can solid white tuna in oil (drained) salt & pepper 1/2 tsp. paprika 1/4 cup mayonnaise 1 tbsp. brown mustard 1/4 cup sweet pickle relish Directions Add cold water to a large sauce pot, bring to a boil. Lightly salt water, add macaroni to boiling water. Let boil for 8-9 minutes, till tender but still firm. Drain macaroni in a colander. Run under cold water a few seconds to stop the cooking process. Add salt and pepper to taste, mayo, mustard and pickle relish. Mix lightly. Add in chopped onions, boiled egg, and tuna....

Classic Potato Salad

The chicken is good....The potato salad is even better I whipped up this quick and easy potato salad a few nights ago, to cure my carb cravings. I had some leftover fried chicken from dinner the night before and I needed something simple to go with it.  After all, on a Saturday night I didn't really feel like doing the whole big meal. This classic family recipe is creamy, eggy, and kind of sweet and salty at the same time. Quick And Easy Potato Salad Ingredients 4 Large/ 6 medium Potatoes (I used eastern white) 2 l arge eggs (boiled and chopped) 2 tbsp  m ayo 2 tsp  b rown mustard 1/4 cup s weet pickle relish 1/8 cup diced onion (I used red) 1 tsp salt 1/2 tsp pepper 1 tsp paprika Cooking Directions *Fill a pot with cold water. OVEN FRIED CHICKEN

Can you achieve this beautiful deep golden color  without deep frying? Absolutely! The right blend of seasonings, lightly dredged in flour and baked in the oven,  with a fraction of the fat? You can so do this!!! The key to the big flavor is to season the chicken AND the flour. (I know you know this.) 4 -  1/2 Pd Chicken Breast - Bone in (These things are huge so they go a long way...) 2 TBS canola/ or vegetable oil (if you use olive oil make sure it's light for frying) 2 TBS butter Seasoning Bag  (omit or add whatever you like)  measurements are approximate. (STICK A FINGER IN AND TASTE YOUR SEASONING TO ADJUST) Salt - 1/2 tsp Pepper - 1/2 tsp Seasoning Salt - 1 TBS Garlic powder - 1tsp Paprika - 1  tsp Flour Seasoning All purpose Flour - 1 cup Seasoning salt - 1 tsp Paprika - 1 tsp Bread crumbs  - 1 TBS Wash and trim excess fat off of chicken breast. My Love For The Cosi Signature Salad

If you’ve ever had the pleasure of having a Cosi Signature salad, then I'm sure you will agree with me, as it is my favorite salad with a dressing you can drink. (kidding) I miss living in the big city so I have to improvise. And with a huge thanks to  The Brown Eyed Baker  ,  I was able to recreate it down to that awesome drinkable dressing.  This is the first salad I’ve eaten with fruit in it. It has pistachios, red grapes, gorgonzola cheese, pears, and dried cranberries. I added leftover cooked chicken because I was starving and I didn’t want to be hungry later. My hubby sliced up a boiled egg in his. No egg for me. I had one already this afternoon. The chicken was a great companion to the fresh fruit.                                         *Note: The Original Cosi salad does not have chicken or eggs.                   ...
