NOSTALGIA BREAKFAST - CINNAMON TOAST

One of my favorite breakfasts growing up was cinnamon toast.
It is still a family staple in my house. Not only is it delicious, It was mom's way of getting us to eat wheat bread or as I use to say "brown bread".

 Ingredients
4 slices whole grain bread
softened butter
(room temp or bread will tear)
1 1/4 Tbsp. cinnamon (for all 4 slices)
1 1/2 Tbsp. granulated sugar (for all 4 slices)

Directions
Preheat oven/ toaster oven to 450.

Spread butter on top of each slice of bread.
Sprinkle enough cinnamon to cover bread
(a light to med dusting is enough)
Approx. 1/2 tsp of sugar to top each slice
(less or more to your liking)
Your bread will have a very rustic look before toasting.

Put bread in preheated toaster oven or broiler
(DON'T LEAVE THE KITCHEN!)
The top will melt quickly from the high heat.
Cooking time is approximate (1-2 min)
When butter and sugar melt
turn toast over and put back into oven.
Don't worry. The top side will not melt off.
(top side should be melted and appear "slightly" wet but should not be runny so it doesn't slide off.)

Lightly toast plain side of bread (30 sec - 1 min)
Add a tad bit more butter to top off toast ( optional)

As you can see below:
the sugar, butter and cinnamon form a perfect crust.

ENJOY!
 with bacon of course :)

* oven temps/ cooking times vary

My Love For The Cosi Signature Salad

If you’ve ever had the pleasure of having a Cosi Signature salad, then I'm sure you will agree with me, as it is my favorite salad with a dressing you can drink. (kidding) I miss living in the big city so I have to improvise. And with a huge thanks to  The Brown Eyed Baker  ,  I was able to recreate it down to that awesome drinkable dressing.  This is the first salad I’ve eaten with fruit in it. It has pistachios, red grapes, gorgonzola cheese, pears, and dried cranberries. I added leftover cooked chicken because I was starving and I didn’t want to be hungry later. My hubby sliced up a boiled egg in his. No egg for me. I had one already this afternoon. The chicken was a great companion to the fresh fruit.                                         *Note: The Original Cosi salad does not have chicken or eggs.             ...
