IT'S FRIDAY...MANGO MAI TAI TIME

When I have the time to hang out with my family, one of our favorite dinner hangouts is..."Red Lobster". kids, crab legs, biscuits. What else right? They have this drink called the Mango Mai Tai. It's sooo good. It's cool, fruity and not too much alcohol...I read the ingredients on the menu to see if I could try to make it at home and it was simple...

Pineapple Juice
Orange Juice
Mango Rum 
Grenadine Syrup

Thats it. So the following weekend I decided to try it. 
After a 90 hour work week, I deserved it. Here's what I used:

Malibu Mango Rum (sweet and delicious)
Dole Orange Pineapple Juice
Rose's Grenadine Syrup
Plenty of ice
Shaker

Pour the mango rum and the Orange pineapple juice over ice, shake and pour. Add a few drops of Grenadine and there it is. 
Because the Malibu Rum is sweet you can add quite a bit to the juice mixture. I like more juice than alcohol, but to each his own. 
I liked the Dole Orange pineapple Juice combo because it comes out thinner than using the orange and pineapple juice separately. 
As you can see the drink is pretty transparent and not thick. Add a pineapple and cherry garnish and enjoy. Multiple times.

I also make a Coconut Rum version of the Mai Tai. 
It's just as awesome!

Pancakes With Crunchy Edges are Life...

Who doesn't enjoy a pancake with a crisp edge?  You know... the crispiness that only  your mom or grandma could achieve. When I saw this meme on the internet, I laughed out loud because it's something my sister Stacey and I talk about all the time. We would go to diners and restaurants and request pancakes with crunchy edges. The waitress would say okay...but return with regular ol' pancakes with soft edges.  I gave up.  I decided if I wanted pancakes like this,  I would just make them at home.  When looking at the meme's comments, I noticed that most people stated that only their parents or grandparents  could achieve this crunchy goodness.  Quite a few of the comments in the meme questioned  how to achieve pancakes with crunchy edges?  I chime in with  "It's really not hard to achieve." All you have to do is add a few drops of cooking oil around the sides of your pancakes while cooking ...

I CANNOT WAIT...

 to share some of my favorite recipes  and food experiences.  I am still trying to figure out how web templates work...I want to make the site as easy as possible for readers to find what they like. You will definitely see some changes as we progress and I become more familiar with managing the blog.
