IT'S FRIDAY...MANGO MAI TAI TIME

When I have the time to hang out with my family, one of our favorite dinner hangouts is..."Red Lobster". kids, crab legs, biscuits. What else right? They have this drink called the Mango Mai Tai. It's sooo good. It's cool, fruity and not too much alcohol...I read the ingredients on the menu to see if I could try to make it at home and it was simple...

Pineapple Juice
Orange Juice
Mango Rum 
Grenadine Syrup

Thats it. So the following weekend I decided to try it. 
After a 90 hour work week, I deserved it. Here's what I used:

Malibu Mango Rum (sweet and delicious)
Dole Orange Pineapple Juice
Rose's Grenadine Syrup
Plenty of ice
Shaker

Pour the mango rum and the Orange pineapple juice over ice, shake and pour. Add a few drops of Grenadine and there it is. 
Because the Malibu Rum is sweet you can add quite a bit to the juice mixture. I like more juice than alcohol, but to each his own. 
I liked the Dole Orange pineapple Juice combo because it comes out thinner than using the orange and pineapple juice separately. 
As you can see the drink is pretty transparent and not thick. Add a pineapple and cherry garnish and enjoy. Multiple times.

I also make a Coconut Rum version of the Mai Tai. 
It's just as awesome!

TEMPTING TURKEY BURGERS

    It's Spring Again!  The warm weather has finally surfaced in New York. For my family...it's burger time .         Now for myself, since I am holding off on meat for a little while longer  I am going to suffer through a salad. My babies will be able to indulge :(   My turkey burger recipe is both simple and very flavorful. My recipe is for 8 medium sized burgers -about 1/3 lb each. Each 1 lb. package of turkey makes 4 burgers.   Ingredients 2 Lbs. Ground White Turkey 1 small white onion diced olive oil salt & pepper 1 Tbsp. granulated onion powder 1 Tbsp. granulated garlic powder 1 Tbsp. ketchup Cheese of choice   Directions The key to a great burger is not over handling the meat. My Love For The Cosi Signature Salad

If you’ve ever had the pleasure of having a Cosi Signature salad, then I'm sure you will agree with me, as it is my favorite salad with a dressing you can drink. (kidding) I miss living in the big city so I have to improvise. And with a huge thanks to  The Brown Eyed Baker  ,  I was able to recreate it down to that awesome drinkable dressing.  This is the first salad I’ve eaten with fruit in it. It has pistachios, red grapes, gorgonzola cheese, pears, and dried cranberries. I added leftover cooked chicken because I was starving and I didn’t want to be hungry later. My hubby sliced up a boiled egg in his. No egg for me. I had one already this afternoon.
